Okay, so, I think I've figured out why all of my cheesecake attempts come out horrifically sickly, and basically it's because I need to a) Use a milder cheese (less Philadephia cream cheese, more marscapone - paneer actually also works well, but it's difficult to get a hold of and it takes ages to make) and b) Add cream to it to get a creamier, milder taste.
